I have always out of habit given the sterntube greaser 5 half turns. Is this too much? Is there a rule? Or maybe until it stops dripping.

There is no rule because the amount of grease used depends upon temperature, wear in the shaft, bearings and gland, and how long you have been running. I turn mine down until it stiffens and then a couple more turns unless it virtually stops before that. It could be anything between 3 and 10 or more turns. As a new shaft and bearing is likely to be costly I would not stint on using the greaser.
