Yes, its usually done with the boat in the water. Be aware that the degree of water leaking into the boat very much depends upon the amount of wear in the shaft and bearings. If its is little then using the greaser before you remove the old packing may seal the shaft completely. If there is much wear the water ingress could be a little worrying the first time you do it but the bilge pump should more that cover the inrush. Prepare your packing and get all the tools you need before you remove the old packing.
